For the Crispy Shrimp

    Prepare the Shrimp

    In a bowl, season the shrimp with salt, black pepper, and cayenne pepper. Set aside.

    Set Up Breading Station

    In one bowl, place flour. In another bowl, beat the eggs. In a third bowl, mix cornmeal with a pinch of salt.

    Bread the Shrimp

    Dredge each shrimp in flour, dip into the beaten eggs, then coat with cornmeal mixture. Ensure they are well coated.

    Fry the Shrimp

    Heat oil in a deep skillet over medium heat. Once hot, fry the shrimp in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.

For the Picante Aioli

    Make the Aioli

    In a bowl, combine mayonnaise, lime juice, minced chipotle, minced garlic, and salt. Mix well and refrigerate until ready to use.

For the Jicama Slaw

    In a mixing bowl, combine jicama, red cabbage, carrot, lime juice, chopped cilantro, and salt. Toss to combine and set aside.

For the Pineapple Mango Salsa

    Make the Salsa

    In a bowl, combine diced pineapple, mango, red onion, minced jalapeño, lime juice, and salt. Mix well and set aside.

For Assembly

    Assemble the Tacos

    Warm corn tortillas in a skillet. Place crispy shrimp on each tortilla, top with jicama slaw, pineapple mango salsa, and drizzle with picante aioli. Garnish with fresh cilantro.
