Flatbread Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Gradually add water and olive oil. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

    Roll Out the Dough

    After resting, roll the dough out into a thin round shape, about 1/4 inch thick, to form the flatbread base.

Topping Preparation

    Prepare the Garlic Oil

    In a small saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes. Remove from heat and set aside.

    Steam the Spinach

    In a steamer basket over boiling water, steam the fresh spinach for about 2-3 minutes until wilted. Remove from heat and squeeze out excess moisture. Chop roughly.

    Mix the Topping

    In a bowl, combine ricotta, steamed spinach, salt, and pepper to taste. Mix until well combined.

Assembling and Baking

    Preheat Oven

    Preheat your oven to 450°F (232°C) or prepare a grill for medium-high heat.

    Assemble the Flatbread

    Spread the ricotta and spinach mixture evenly over the rolled-out flatbread. Sprinkle mozzarella on top, followed by drizzling the garlic oil.

    Bake the Flatbread

    Place the flatbread in the preheated oven or on the grill. Bake for 10-15 minutes, or until the edges are golden brown and the cheese is melted.

    Garnish and Serve

    Remove the flatbread from the oven. Top with fresh basil leaves and let it cool slightly before slicing. Serve warm.
