Steak Preparation

    Prepare the Steak

    Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps ensure even cooking.

    Season the Steaks

    Rub both sides of each ribeye steak with olive oil. Generously season with kosher salt, black pepper, and garlic powder. Sprinkle fresh rosemary on both sides. Let the steaks sit for another 10-15 minutes to absorb the flavors.

Grilling

    Preheat the Grill

    Preheat your grill to high heat (about 450°F to 500°F). If using a charcoal grill, let the coals burn until they are covered with white ash.

    Grill the Steaks

    Place the ribeye steaks on the grill. Cook for about 4-5 minutes on one side without moving them to get a good sear.

    Flip the Steaks

    Using tongs, flip the steaks and cook for another 3-5 minutes for medium-rare, or longer if you prefer them more done. Use a meat thermometer for accuracy: 130°F for medium-rare, 145°F for medium.

    Add Butter and Herbs

    During the last minute of cooking, add butter and fresh rosemary sprigs on top of the steaks. Allow the butter to melt and baste the steaks with the melted butter using a spoon.

    Rest the Steaks

    Remove the steaks from the grill and let them rest for 5-10 minutes before slicing. This helps the juices redistribute throughout the meat.
