Prepare the Sautéed Mushrooms

Caramelize the Onions

Cook the Onions
In another skillet, heat the olive oil over medium-low heat. Add the thinly sliced onions and salt. Cook slowly, stirring occasionally, until the onions are caramelized and golden brown, about 20-25 minutes. Stir in the balsamic vinegar and cook for another 2 minutes. Remove from heat.
Make the Horseradish Sauce

Combine Sauce Ingredients
In a bowl, mix together the prepared horseradish, sour cream, lemon juice, and salt. Adjust seasoning to taste. Set aside.
Prepare the Au Jus

Heat the Beef Broth
In a small saucepan, heat the beef broth over medium heat. Season with salt and black pepper to taste. Keep warm until ready to serve.
Assemble the Sandwich

Toast the Rolls
Preheat your oven to 350°F (175°C). Cut the artisan rolls in half and place them on a baking sheet. Toast in the oven for about 5-7 minutes, or until golden.

Melt the Cheese
Return the assembled sandwiches to the oven for an additional 3-5 minutes, or until the cheese is melted.
Serve the Sandwich

Serve the sandwiches with fresh greens on the side and a small bowl of warm au jus for dipping.
