Preparing the Prime Rib

    Season the Prime Rib

    Preheat your oven to 450°F (232°C). Mix together salt, black pepper, and garlic powder in a small bowl. Rub the prime rib roast with olive oil and then coat it evenly with the seasoning mixture.

    Roast the Prime Rib

    Place the seasoned prime rib in a roasting pan, fat side up. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours or until the internal temperature reaches 130°F (54°C) for medium-rare. Remove from the oven and let rest for at least 20 minutes before slicing.

Sautéing the Mushrooms

    Cook the Mushrooms

    In a skillet, melt butter over medium heat. Add the sliced mushrooms and cook until they are browned and tender, about 8-10 minutes. Stir in minced garlic and fresh thyme, and cook for another 2 minutes. Remove from heat and set aside.

Caramelizing the Onions

    Caramelize the Onions

    In a separate skillet, melt butter over medium-low heat. Add the sliced onions and cook slowly, stirring occasionally, until they are golden brown and caramelized, about 20-25 minutes. Stir in brown sugar and balsamic vinegar, cooking for another 2-3 minutes. Remove from heat.

Assembly

    Assemble the Sandwiches

    Slice the toasted Cuban rolls in half. Layer the sliced prime rib, sautéed mushrooms, caramelized onions, and fontina cheese on the bottom half of each roll. Add horseradish sauce to taste, then close the sandwich with the top half of the roll.

    Prepare the Au Jus

    In a small saucepan, heat the beef broth over medium heat until warmed through. Serve alongside the sandwiches for dipping.
