Method
Prepare the Salmon
- 1
Marinate the Salmon
In a small bowl, whisk together olive oil, lemon juice, chopped fresh dill, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Let marinate for at least 30 minutes in the refrigerator.
- 2
Preheat the Oven
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Cook the Salmon
- 3
Bake the Salmon
Remove the salmon from the marinade and place it skin-side down on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.

Roast the Asparagus
Trim the ends of the asparagus and place them on another baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat. Roast in the oven alongside the salmon for the last 10-15 minutes of cooking time.

Boil the Potatoes
In a pot, add the baby potatoes and cover them with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and toss with butter, chopped parsley, salt, and pepper to taste.
Serve the Dish

Plating
Once everything is cooked, remove from the oven and arrange the salmon fillets on plates. Serve with roasted asparagus and buttered baby potatoes as your two house-made sides.
