Ice Cream Preparation

    Combine the Dairy

    In a medium saucepan, whisk together the heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of salt. Heat over medium heat until the mixture is warm but not boiling.

    Mix Cornstarch

    In a small bowl, mix the cornstarch with a few tablespoons of the warm milk mixture to form a slurry. Stir until smooth.

    Thicken the Ice Cream Base

    Add the cornstarch slurry back into the saucepan. Continue to cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon, about 5-7 minutes.

    Flavor the Ice Cream

    Remove from heat and stir in your chosen flavoring (pureed fruit, melted chocolate, etc.). Let the mixture cool to room temperature, then refrigerate for at least 4 hours or overnight.

    Churn the Ice Cream

    Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions. Transfer the churned ice cream to a container and freeze for at least 4 hours until firm.

    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    In a bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.

    In a large bowl, beat the unsalted butter, brown sugar, and granulated sugar together until light and fluffy, about 3-4 minutes.

    Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

    Gradually add the dry ingredients to the wet mixture, mixing until just combined.

    Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.

    Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Assembly

    Sandwich the Ice Cream

    Once both the ice cream and cookies are ready, scoop a generous amount of ice cream onto the flat side of one cookie. Top with another cookie, pressing gently to create a sandwich.

    Wrap each sandwich in plastic wrap and freeze for at least 1 hour to firm up before serving.
