Method

Preparation of Mahi Mahi

    Marinate the Fish

    In a bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper. Place the Mahi Mahi fillets in the bowl and coat them thoroughly with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.

    Preheat the Grill

    While the fish is marinating, preheat your grill to medium-high heat (around 400°F or 200°C).

    Grill the Mahi Mahi

    Once the grill is hot, place the marinated Mahi Mahi fillets on the grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has nice grill marks. Remove from grill and let rest for a few minutes.

Preparation of Sides

    Prepare the Asparagus and Tomatoes

    Trim the tough ends off the asparagus and toss them with a drizzle of olive oil, salt, and pepper. Place them on the grill alongside the Mahi Mahi for the last 5-7 minutes of cooking, turning occasionally. In the last few minutes, add the cherry tomatoes to the grill until they blister slightly.

    Cook the Quinoa

    In a saucepan, bring the vegetable broth to a boil. Add the quinoa, cover, and reduce the heat to low. Simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.
