Preparing the Rice

    Place the rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    In a medium pot, combine the rinsed rice, water, and salt. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes, or until all the water is absorbed.

    Once cooked, remove the pot from heat and let it sit, covered, for an additional 10 minutes.

Making the Vinegar Mixture

    Combine Ingredients

    In a small bowl, whisk together rice vinegar, sugar, and salt until the sugar and salt are dissolved.

Mixing the Rice

    Season the Rice

    Transfer the cooked rice to a large bowl. Pour the vinegar mixture over the rice and gently fold it in using a spatula. Allow the rice to cool to room temperature.
