Prepare the Ice Cream

Scoop the Ice Cream
Scoop 1 cup of vanilla ice cream into 4 balls and place them on a baking sheet. Freeze them for at least 2 hours or until solid.
Prepare the Tortilla Shells

Mix Cinnamon Sugar
In a small bowl, mix together cinnamon and sugar. Set aside.

Fry the Tortillas
In a large skillet, heat vegetable oil over medium heat. Once hot, fry each flour tortilla for about 30 seconds on each side, until golden and crispy. Remove from oil and drain on paper towels.

Assemble the Fried Ice Cream

Wrap the Ice Cream
Take one of the frozen ice cream balls and place it in the center of a cinnamon-coated tortilla. Fold the tortilla around the ice cream, pinching the edges to seal it. Repeat with remaining ice cream balls.

Fry the Coated Ice Cream
In the same skillet, heat more oil if needed, and carefully place the wrapped ice cream into the hot oil. Fry for about 10-15 seconds until golden brown. Remove and let drain on paper towels.

Plate and Garnish
Place the fried ice cream on a serving plate. Drizzle with caramel sauce, and top with sliced strawberries and a generous dollop of whipped cream.
