Stuffed Jalapeños Preparation

Prepare the Jalapeños
Preheat the oven to 400°F (200°C). Slice each jalapeño in half lengthwise and remove the seeds and membranes for less heat, if desired.

Make the Cheese Filling
In a mixing bowl, combine cream cheese, sharp cheddar cheese, Monterey Jack cheese, and pepper jack cheese. Mix until well combined and creamy.

Stuff the Jalapeños
Using a spoon or piping bag, fill each jalapeño half with the cheese mixture. Make sure to pack it in well.

Wrap with Bacon
Wrap each stuffed jalapeño with a slice of bacon, securing it with a toothpick if necessary.

Bake the Jalapeños
Place the bacon-wrapped jalapeños on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes until the bacon is crispy and the cheese is bubbly.

Combine Ingredients
In a bowl, combine fresh lime juice, chopped cilantro, sour cream, minced garlic, salt, and black pepper. Mix well until smooth.

Cover the bowl with plastic wrap and refrigerate the sauce for at least 30 minutes to allow the flavors to meld.
