Stuffed Jalapenos

Method

Preparing the Jalapenos

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Jalapenos

    Slice the jalapenos in half lengthwise and remove the seeds and membranes for a milder flavor, or leave some for extra heat.

    Make the Cheese Filling

    In a mixing bowl, combine the cream cheese, shredded cheddar cheese, shredded mozzarella cheese, crumbled feta cheese, salt, and black pepper. Mix until smooth and well combined.

    Stuff the Jalapenos

    Spoon the cheese mixture into each jalapeno half, filling them generously.

    Wrap with Bacon

    Wrap each stuffed jalapeno with a slice of cooked bacon. Secure with a toothpick if necessary.

    Roast the Jalapenos

    Place the bacon-wrapped jalapenos on a baking sheet lined with parchment paper. Drizzle with olive oil and roast in the preheated oven for 20-25 minutes, or until the bacon is crispy.

Making the Lime Cilantro Sauce

    Blend the Sauce

    In a blender or food processor, combine fresh cilantro, lime juice, garlic clove, olive oil, salt, and pepper. Blend until smooth.

    Adjust Seasoning

    Taste the sauce and adjust seasoning with more salt or lime juice if needed.

    Chill the Sauce

    Transfer the sauce to a bowl and refrigerate until ready to serve.

Serving
