    Season the Steak

    Sprinkle the NY Strip Steak with salt and black pepper evenly on both sides.

    Sear the Steak

    Heat olive oil in a skillet over medium-high heat. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5 minutes before topping with cowboy butter.

Cowboy Butter

    Prepare the Butter

    In a bowl, combine softened unsalted butter with minced garlic, chopped parsley, chopped chives, lemon juice, paprika, cayenne pepper, and salt. Mix well until fully combined.

    Chill the Butter

    Transfer the cowboy butter mixture onto a piece of parchment paper, shape into a log, and refrigerate until firm.

Garlic Whipped Potatoes

    Boil the Potatoes

    Peel and chop the russet potatoes into chunks. Place them in a pot of salted water, bring to a boil, and cook for about 15-20 minutes until tender.

    Make the Whipped Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, minced garlic, salt, and black pepper. Whip with a potato masher or mixer until smooth and creamy.

Steamed Spinach

    In a large pot, bring water to a boil. Add fresh spinach and a pinch of salt. Steam for about 2-3 minutes until wilted.

    Drain the spinach and toss with olive oil before serving.
