Method

Chicken Preparation

  1. 1

    Prepare the Chicken

Preheat your oven to 375°F (190°C). In a large mixing bowl, drizzle the olive oil over the chicken breasts, and season them with salt and black pepper. Ensure the chicken is evenly coated.

  2. 2

    Bake the Chicken

Place the seasoned chicken breasts in a baking dish and bake in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C).

Topping Preparation

  1. 3

    Prepare the Toppings

While the chicken is baking, crumble the goat cheese and chop the sun-dried tomatoes. Set aside. Finely chop the fresh basil.

Citrus Garlic Sauce

  1. 4

    Make the Sauce

In a small saucepan, add minced garlic and sauté over medium heat until fragrant, about 1-2 minutes. Add fresh orange juice, lemon juice, honey, salt, and pepper. Bring to a simmer and cook for 5-7 minutes, allowing the sauce to reduce and thicken slightly.

Assembly

  1. 5

    Assemble the Dish

Once the chicken is cooked, remove it from the oven and top each breast with crumbled goat cheese, chopped sun-dried tomatoes, and fresh basil. Drizzle the citrus garlic sauce over the top.

  2. 6

    Serve

Serve the Chuckawalla Chicken warm, along with garlic whipped potatoes and grilled asparagus on the side.
