Method

Cake Directions

  1. 1

    Prepare the Oven

Preheat your oven to 180°C (350°F). Grease a 9-inch round cake pan and line the bottom with parchment paper.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave in short bursts, stirring until smooth.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and large eggs until well combined. Add the vanilla extract and salt, mixing thoroughly.

  4. 4

    Combine Mixtures

Once the chocolate and butter mixture has cooled slightly, pour it into the egg and sugar mixture. Stir gently until combined, making sure not to overmix.

  5. 5

    Bake the Cake

Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 25-30 minutes, or until the center is set and a toothpick inserted comes out with a few moist crumbs.

  6. 6

    Cool and Remove

Allow the cake to cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely. Remove the parchment paper carefully.

Raspberry Coulis Directions

  1. 7

    Prepare the Raspberries

In a saucepan over medium heat, combine the fresh raspberries and granulated sugar.

  2. 8

    Cook the Coulis

Stir the mixture gently until the raspberries break down and the sugar dissolves, about 5-7 minutes.

  3. 9

    Add Flavorings

Remove the pan from heat and stir in the Grand Marnier and lemon juice. Allow to cool slightly.

  4. 10

    Blend and Strain

Using an immersion blender or a regular blender, puree the raspberry mixture until smooth. Strain through a fine-mesh sieve to remove seeds if desired.
