Crust Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix the Crust Ingredients
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the bottom of a measuring cup to compact the crust.

Bake the Crust
Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from oven and let it cool while preparing the filling.

Beat the Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

Add Sugar and Sour Cream
Gradually add the granulated sugar and sour cream to the cream cheese, mixing until well combined.

Incorporate Vanilla and Eggs
Mix in the vanilla extract. Then, add the eggs one at a time, mixing on low speed until just incorporated after each addition.

Add Flour
Finally, add the all-purpose flour and mix until smooth. Avoid overmixing.

Pour the Filling
Pour the cheesecake filling over the cooled crust in the springform pan.

Bake the Cheesecake
Bake the cheesecake in the oven at 325°F (160°C) for 50-60 minutes or until the center is set but still slightly jiggly.

Cool the Cheesecake
Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. Then remove it from the oven and let it cool at room temperature before refrigerating for at least 4 hours or overnight.

Prepare the Raspberry Sauce
In a medium saucepan over medium heat, combine the fresh raspberries, granulated sugar, and lemon juice. Cook while stirring gently until the raspberries break down and the mixture thickens slightly, about 5-7 minutes.

Cool the Sauce
Remove from heat and let the raspberry sauce cool completely before using it to top the cheesecake.

Serve the Cheesecake
Once the cheesecake is chilled, remove it from the springform pan and drizzle the cooled raspberry sauce on top just before serving.
