Preparation

  1. 1

    Prepare the Ingredients

Chop the wild caribou meat into bite-sized pieces and set aside. Mince the garlic, dice the onion, and peel and chop the carrots and potatoes into cubes.

Cooking

  1. 2

    Sear the Meat

In a large pot, heat olive oil over medium-high heat. Add the chopped caribou meat and sear until browned on all sides, about 5-7 minutes.

  2. 3

    Add Aromatics

Add minced garlic and diced onion to the pot. Sauté for about 3-4 minutes until the onion is translucent.

  3. 4

    Add Vegetables and Broth

Stir in the chopped carrots and potatoes. Pour in the beef broth and bring the mixture to a gentle boil.

  4. 5

    Season the Stew

Add dried thyme, bay leaf, salt, black pepper, and juniper berries. Stir well to combine.

  5. 6

    Simmer the Stew

Reduce heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, stirring occasionally, until the caribou is tender.

Serving

  1. 7

    Garnish and Serve

Once the stew is ready, remove the bay leaf and juniper berries. Ladle the stew into bowls and garnish with fresh parsley before serving.
