Prepare the Quinoa

    Rinse the Quinoa

    Place 1 cup of quinoa in a fine mesh strainer and rinse under cold running water for about 1-2 minutes to remove any bitterness.

    Cook the Quinoa

    In a medium saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed.

    Fluff the Quinoa

    Remove the saucepan from heat and let it sit for 5 minutes. Then, fluff the quinoa with a fork and set aside.

Sauté the Vegetables

    Heat the Olive Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Cook the Onion and Garlic

    Add the diced red onion and minced garlic to the skillet. Sauté for about 2-3 minutes until the onion becomes translucent.

    Add the Bell Pepper, Zucchini, and Carrot

    Stir in the diced bell pepper, zucchini, and shredded carrot. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender.

Season the Dish

    Sprinkle in the cumin, paprika, salt, and black pepper. Stir well to combine and cook for an additional 2 minutes.
