Preparing the Chicken

    Grill the Chicken

    Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

    Cook the Bacon

    While the chicken is grilling, cook the bacon in a skillet over medium heat until crispy. Once done, remove from the skillet and place on a paper towel to drain excess grease.

Preparing the Vegetables

    Chop the Vegetables

    Dice the red bell pepper and red onion into small pieces. Slice the scallions thinly, using both the white and green parts.

Assembling the Dish

    Combine Ingredients

    Once the chicken is done, remove it from the grill and let it rest for a couple of minutes. Shred or slice the chicken into bite-sized pieces and mix it with the cooked bacon, diced red bell pepper, and red onion.

    Add the Sauce

    Pour the Buffalo sauce over the chicken mixture and stir until everything is well coated.

    Melt the Cheese

    Transfer the mixture into a baking dish or grill-safe pan. Sprinkle mozzarella cheese over the top and return it to the grill for 5-7 minutes, or until the cheese is melted and bubbly.

Final Touches

    Drizzle with Ranch

    Once the cheese is melted, remove the dish from the grill. Drizzle ranch dressing over the top to taste.
