Base Ingredients

Method

Preparation

  1. 1

    Sauté the Vegetables

In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and carrot. Sauté for about 5 minutes until the vegetables are softened.

  2. 2

    Add Garlic and Potatoes

Stir in the minced garlic and diced potatoes. Cook for another 2 minutes, stirring frequently.

Cooking the Chowder

  1. 3

    Cook the Bacon

In a separate pan, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pan and drain on paper towels.

  2. 4

    Combine with Broth

To the pot with the vegetables, add the chicken broth, heavy cream, and thyme. Bring to a simmer.

  3. 5

    Add Clams and Season

Once the soup is simmering, add the chopped clams, cooked bacon, salt, and black pepper. Stir well and let simmer for another 10-15 minutes, until the potatoes are tender.

  4. 6

    Garnish and Serve

Ladle the chowder into bowls and garnish with fresh chopped parsley. Serve hot.
