Cooking Pasta

Boil the Pasta
In a large pot, bring salted water to a boil. Add 8 cups of penne pasta and cook according to package instructions until al dente. Drain and set aside.
Preparing Blackened Chicken

Season the Chicken
Pat the chicken breasts dry with paper towels. Rub both sides of each chicken breast with blackening seasoning.

Cook the Chicken
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the seasoned chicken breasts. Cook for 6-7 minutes on each side, or until the chicken is cooked through and has a blackened crust. Remove from skillet and let rest before slicing.

Sauté the Vegetables
In the same skillet used for the chicken, add the sliced onion and red bell pepper. Sauté for about 3-4 minutes. Then add the broccoli florets and sliced carrots and continue to sauté for another 5 minutes until all vegetables are tender.
Making the Sauce

Prepare the Cream Sauce
In a separate saucepan, combine 1 cup of heavy cream, 2 tablespoons of minced garlic, 1 teaspoon of salt, and 1 teaspoon of black pepper. Bring to a gentle simmer over medium heat, stirring occasionally.

Add Parmesan Cheese
Once the cream sauce is simmering, gradually whisk in 1 cup of grated Parmesan cheese until melted and smooth.
Combining Ingredients

Combine Pasta, Chicken, and Sauce
In a large mixing bowl, combine the cooked penne pasta, sautéed vegetables, sliced blackened chicken, and the cream sauce. Toss gently until everything is well coated.

Serve immediately while hot. Garnish with additional Parmesan cheese if desired.
