Preparing the Fish

Broil the Mahi Mahi
Preheat the broiler in your oven. Brush the mahi mahi fillets with olive oil, and season with salt and black pepper. Place on a broiler pan and broil for 5-7 minutes on each side, or until the fish is opaque and flakes easily with a fork.
Caramelizing the Onions

Cook the Onions
In a skillet over medium heat, melt the butter. Add the sliced onion and brown sugar. Cook for 15-20 minutes, stirring occasionally, until the onions are soft, caramelized, and golden brown.
Making the Salsa

Prepare Pineapple Mango Salsa
In a mixing bowl, combine diced pineapple, mango, red onion, and minced jalapeño. Add lime juice and mix well. Set aside to let the flavors meld.
Making the Aioli

Prepare Chimi Aioli
In a bowl, whisk together mayonnaise, chopped cilantro, minced garlic, and lime juice until smooth. Adjust seasoning as desired.
