Steak Preparation

Prepare the Steak
Season the flat iron steak with salt and black pepper on both sides.

Cook the Steak
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Once hot, add the seasoned steak and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Remove from the skillet and let rest for 5 minutes before slicing thinly.

Prepare the Potatoes
Wash and dice the breakfast potatoes into small cubes.

Cook the Potatoes
In the same skillet used for the steak, add another tablespoon of olive oil and heat over medium heat. Add the diced potatoes, season with salt, and cook for about 10-12 minutes, stirring occasionally, until golden brown and crispy.

Cook the Eggs
In a separate non-stick pan, heat a small amount of oil or butter over low heat. Crack the eggs into the pan, cooking them for about 2-3 minutes until the whites are set but the yolks remain runny. Carefully flip the eggs to cook the other side for an additional minute, if preferred.
