    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Season the chicken breasts with olive oil, salt, and black pepper.

    Roast the Chicken

    Place the seasoned chicken breasts in an oven-safe dish and roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).

    Make the Veloute Sauce

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1-2 minutes until lightly browned. Gradually whisk in the chicken stock and bring to a simmer, stirring frequently until the sauce thickens.

    Add Cream and Seasoning

    Reduce the heat to low, then stir in the heavy cream and fresh thyme. Let the sauce simmer for another 5 minutes, stirring occasionally. Season to taste with salt and pepper.

    Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. Slice the chicken and serve it drizzled with the creamy veloute sauce.
