Pasta Dough

    Make the Dough

    In a clean workspace, mound the flour and make a well in the center. Crack the eggs into the well, add the salt, and gradually mix the flour into the eggs until a dough forms. Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Filling

    Prepare the Filling

    In a bowl, combine the ricotta, grated Parmigiano-Reggiano, chopped basil, salt, and black pepper. Mix until well combined and set aside.

Pickled Cherries

    Pickle the Cherries

    In a saucepan, combine white vinegar, sugar, and water. Bring to a simmer, stirring until sugar dissolves. Add the pitted cherries and simmer for 5 minutes. Remove from heat and let it cool before transferring to a jar. Refrigerate for at least 2 hours before serving.

Cherry Reduction

    Make Cherry Reduction

    In a saucepan, combine the pitted cherries, water, and sugar. Bring to a boil, then reduce heat and simmer until the mixture thickens, about 15 minutes. Strain and set aside.

Assembly

    Fill and Cook the Pasta

    Roll out the pasta dough thinly. Cut into squares, place a teaspoon of filling in the center of each square, and fold to seal. Boil the filled pasta in salted water for 3-4 minutes until they float. Serve with pickled cherries and drizzle with cherry reduction.
