    Preheat your oven to 400°F (200°C). Trim excess fat from the rack of lamb and pat it dry with paper towels.

    In a food processor, combine garlic cloves, rosemary, thyme, olive oil, salt, and black pepper. Blend until a paste forms.

    Rub the herb paste all over the rack of lamb, ensuring it is evenly coated.

    In a large oven-safe skillet, heat a bit of olive oil over medium-high heat. Sear the lamb for 2-3 minutes on each side until browned.
