Cooking the Tenderloin

    Prepare the Tenderloin

    Sprinkle the beef tenderloin with salt and crushed black peppercorns on both sides.

    Sear the Tenderloin

    Heat olive oil and butter in a skillet over medium-high heat. Add the tenderloin and sear for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Making the Sauce

    Sauté Shallots

    In the same skillet, add shallots and sauté until translucent.

    Add Cognac

    Carefully add cognac and allow it to reduce for about 1 minute.

    Prepare Sauce

    Stir in the beef stock, heavy cream, and Dijon mustard. Simmer until the sauce thickens slightly. Season with salt and black pepper to taste.

Serving

    Plate and Serve

    Slice the tenderloin, arrange on a plate, and drizzle the au poivre sauce over the top. Enjoy!
