Preheat Oven
Preheat your oven to 425°F (220°C) to ensure an even cook for your tater tots or fries.

Cook Tater Tots or Fries
Spread the frozen tater tots or house fries on a baking sheet in a single layer. Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy, flipping halfway through.

Add Toppings
Once the tater tots or fries are cooked, remove them from the oven. Immediately sprinkle the shredded cheddar cheese evenly over the top. Follow with the bacon bits.

Melt Cheese
Return the baking sheet to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Prepare Scallion Sour Cream
In a small bowl, mix the sour cream with chopped green onions (scallions) to create your scallion sour cream.

Serve
Remove the baking sheet from the oven. Drizzle the scallion sour cream over the cheesy tater skin bites. Optionally, garnish with additional chopped scallions before serving.
