Method
Chicken Tenders
Prepare the Chicken
Cut the chicken breast fillets into strips about 1 inch wide.
Season the Flour
Add salt, black pepper, garlic powder, onion powder, and cayenne pepper to the flour and mix well.
Bread the Chicken
Take a chicken strip, coat it in the seasoned flour, dip it in the egg mixture, and then coat it with breadcrumbs. Repeat for all chicken strips.
Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken strips and fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
Maine Fries
Prepare the Potatoes
Peel the russet potatoes and cut them into thin fries, about 1/4 inch thick.
Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.
Heat the Oil
In a deep pot, heat the vegetable oil to 350°F (175°C).
Fry the Fries
Drain the fries from the water and pat them dry. Carefully add the fries to the hot oil in batches and fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt.
Serving
Serve the Dish
Plate the crispy chicken tenders alongside the Maine fries. Serve with barbecue sauce and ranch dressing for dipping.
