Ribs Preparation

    Preheat Oven

    Preheat your oven to 300°F (150°C).

    Prepare the Ribs

    Remove the membrane from the back of the baby back ribs for better flavor absorption. Pat the ribs dry with paper towels.

    Season the Ribs

    In a small bowl, mix olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Rub this mixture all over the ribs.

    Bake the Ribs

    Place the ribs on a baking sheet lined with foil, meat side up. Cover with more foil and bake for 2.5 to 3 hours, until tender.

    Apply BBQ Sauce

    Remove the ribs from the oven and discard the top layer of foil. Brush BBQ sauce generously over the ribs.

    Crisp the Ribs

    Increase the oven temperature to 400°F (200°C). Bake uncovered for an additional 15-20 minutes until the sauce is caramelized and crispy.

Maine Fries Preparation

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, resembling fries.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain the soaked fries and pat them dry. Fry them in batches until golden brown and crispy, about 5-7 minutes per batch.

    Season the Fries

    Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt, paprika, and garlic powder.
