Chili Preparation

    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add the chopped onion, minced garlic, bell pepper, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are soft and fragrant.

    Brown the Meat

    Add the ground beef or turkey to the pot. Cook, stirring occasionally, until the meat is browned and cooked through, about 7-10 minutes.

    Combine Remaining Ingredients

    Stir in the diced canned tomatoes, kidney beans, black beans, chili powder, cumin, salt, black pepper, and vegetable broth. Mix well.

    Simmer the Chili

    Bring the chili to a boil, then reduce heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally. The longer it simmers, the more flavors will develop.

Serving

    Prepare Toppings

    While the chili is simmering, prepare the toppings. Chop the scallions and set aside. Shred the cheddar cheese and place it in a serving bowl. Have the sour cream ready for serving.

    Serve the Chili

    Ladle the chili into bowls. Top each serving with a generous dollop of sour cream, a sprinkle of chopped scallions, and a handful of shredded cheddar cheese.
