Method
Preparing the Potato Chips

Soak the Potatoes
Place the sliced potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and ensures crispiness.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.

Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on paper towels to drain. Sprinkle with salt while still hot.
Preparing the Signature Cheese Sauce

Make a Roux
Add the flour to the melted butter and whisk continuously for about 1 minute until it forms a paste.

Add Milk
Gradually add the milk while whisking to prevent lumps. Continue to cook, stirring frequently, until the mixture thickens, about 5 minutes.

Add Cheese and Seasonings
Stir in the cheddar cheese, salt, and black pepper until the cheese is melted and the sauce is smooth.

Chop the Bacon
Once cooled, chop the bacon into small bits.
