Aroostook County Fries

Method

Preparing the Ribs

  1. 1

    Marinate the Ribs

In a bowl, combine soy sauce, sweet chili sauce, garlic powder, ground black pepper, and honey. Mix well to create the marinade.

  2. 2

    Coat the Ribs

Place the pork ribs in a large resealable plastic bag or a baking dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours or overnight for best results.

  3. 3

    Cook the Ribs

Preheat the oven to 300°F (150°C). Place the marinated ribs on a baking sheet lined with aluminum foil. Bake for 2.5 to 3 hours until tender, basting with leftover marinade halfway through cooking.

Making Aroostook County Fries

  1. 4

    Prepare the Potatoes

Wash and peel the potatoes. Cut them into thin fries.

  2. 5

    Season and Bake Fries

In a bowl, toss the cut potatoes with olive oil, salt, and paprika. Spread them on a baking sheet in a single layer. Bake in the oven at 400°F (200°C) for about 25-30 minutes or until golden brown and crispy, flipping halfway through.

Making Cole Slaw

  1. 6

    Prepare the Vegetables

Chop the green cabbage into thin strips and grate the carrots.

  2. 7

    Mix the Dressing

In a large bowl, mix together the mayonnaise, apple cider vinegar, sugar, salt, and ground black pepper until smooth.

  3. 8

    Combine and Serve

Add the chopped cabbage and grated carrots to the bowl with the dressing. Toss thoroughly to combine. Chill in the refrigerator for about 30 minutes before serving.
