Method

Filling Preparation

  1. 1

    Prepare the Raspberry Filling

In a medium-sized mixing bowl, combine the fresh raspberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss the ingredients together until the raspberries are well coated. Set aside to macerate for about 10-15 minutes.

Crust Preparation

  1. 2

    Make the Crust

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Assembly and Baking

  1. 3

    Assemble the Pie

Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface to fit your pie pan. Place the rolled-out dough into the pie pan and fill it with the prepared raspberry mixture. If desired, you can create a lattice crust with any remaining dough.

  2. 4

    Bake the Pie

Bake in the preheated oven for 25-30 minutes or until the filling is bubbly and the crust is golden brown. Allow the pie to cool for at least 10 minutes before serving.
