Method

Crust Preparation

  1. 1

    Make the Dough

In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

  2. 2

    Add Water

Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

  3. 3

    Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

  4. 4

    Roll Out the Dough

On a floured surface, roll out the chilled dough to fit a 9-inch pie pan. Transfer the dough to the pie pan and trim the edges.

Filling Preparation

  1. 5

    Preheat Oven

Preheat your oven to 425°F (220°C).

  2. 6

    Mix the Filling

In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, ground cinnamon, ground ginger, ground nutmeg, and salt. Mix well.

  3. 7

    Add Eggs and Milk

Add the eggs, one at a time, beating well after each addition. Then stir in the evaporated milk until smooth.

  4. 8

    Fill the Crust

Pour the pumpkin filling into the prepared pie crust.

  5. 9

    Bake the Pie

Bake in the preheated oven for 15 minutes. Then reduce the temperature to 350°F (175°C) and continue baking for an additional 35 to 40 minutes, or until a knife inserted into the center comes out clean.

  6. 10

    Cool and Serve

Allow the pie to cool on a wire rack for at least 2 hours before slicing. Serve with whipped cream if desired.
