For the Cake

    Preheat Oven

    Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.

    Cream Butter and Eggs

    In another bowl, cream the softened butter until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

    Combine Mixtures

    Gradually add the dry mixture to the butter mixture, alternating with the chopped apples. Mix until just combined.

    Bake

    Pour the batter into the prepared baking dish and spread evenly. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.

For the Cinnamon Ice Cream

    Combine Ingredients

    In a medium saucepan, combine heavy cream, whole milk, sugar, cinnamon, and vanilla. Heat over medium heat until sugar dissolves.

    Prepare Egg Mixture

    In a bowl, whisk the egg yolks until slightly thickened. Gradually whisk in about a cup of the warm cream mixture to temper the eggs, then stir the yolk mixture back into the saucepan.

    Cook Mixture

    Continue to cook on medium-low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 10-15 minutes).

    Chill and Churn

    Remove from heat and chill the mixture in the refrigerator for at least 2 hours. Once chilled, churn in an ice cream maker according to the manufacturer's instructions.

    In a saucepan over medium heat, melt the sugar until it turns golden brown, about 5-7 minutes, stirring gently.
