    Dice the potatoes into small cubes, chop the onion, celery, and garlic finely. Cut the haddock fillets into bite-sized chunks.

    Cook the Bacon

    In a large pot, cook the bacon bits over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.

    Add the chopped onion, celery, and garlic to the pot with the bacon drippings. Sauté for about 5 minutes until the onions are translucent.

    Stir in the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and let simmer for about 15 minutes or until the potatoes are tender.

    Add Haddock and Herbs

    Once the potatoes are tender, add the haddock chunks, dill, thyme, salt, and pepper. Cook for an additional 5-7 minutes until the haddock is cooked through.

    Stir in the heavy cream and allow the chowder to heat through for another 2-3 minutes. Adjust seasoning with salt and pepper as needed.
