Preparation Steps

  1. 1

    Melt the Chocolate

Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a saucepan of simmering water (double boiler method). Stir until the chocolate is completely melted and smooth. Remove from heat and let it cool slightly.

  2. 2

    Whip the Cream

In a separate bowl, pour the heavy cream and whip it using an electric mixer until soft peaks form. Be careful not to over-whip. Set aside.

  3. 3

    Separate the Eggs

Crack the eggs and separate the yolks from the whites. Place the yolks in one bowl and the whites in another.

  4. 4

    Mix Egg Yolks and Sugar

Add granulated sugar and vanilla extract to the egg yolks. Whisk until the mixture is pale and creamy.

  5. 5

    Combine Chocolate and Egg Yolks

Slowly pour the melted chocolate into the egg yolk mixture while continuously stirring to prevent the eggs from cooking.

  6. 6

    Whip Egg Whites

Using a clean bowl and beaters, whip the egg whites with a pinch of salt until stiff peaks form.

  7. 7

    Fold Ingredients Together

Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture. Then fold in the whipped cream until fully combined.

  8. 8

    Chill the Mousse

Spoon the mousse into individual serving dishes or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours or until set.

  9. 9

    Serve

Once set, serve the chocolate mousse chilled. Optionally, top with additional whipped cream or chocolate shavings.
