Prepare Pulled Chicken

    Cook the Chicken

    In a large skillet, heat the olive oil over medium heat. Add the chicken breasts to the skillet and season with chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Sear the chicken for about 5-7 minutes on each side until cooked through.

    Shred the Chicken

    Once the chicken is cooked, remove it from the skillet and let it cool for a few minutes. Shred the chicken using two forks or your hands.

    Simmer with Water

    Add 1 cup of water to the skillet and return the shredded chicken to the pan. Simmer the chicken in the water for about 10-15 minutes, allowing it to absorb the flavors and become tender.

Assemble Quesadillas

    Prepare Cheese and Tortillas

    Lay a tortilla flat on a clean surface. Sprinkle a generous amount of shredded cheddar cheese over half of the tortilla.

    Add Chicken and Pico de Gallo

    Top the cheese with a portion of the pulled chicken and a spoonful of pico de gallo. Fold the tortilla in half to cover the filling.

    Grill the Quesadilla

    In a clean skillet, heat a small amount of oil over medium heat. Place the folded quesadilla in the skillet and cook for about 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

    Repeat for Remaining Quesadillas

    Repeat the process for the remaining tortillas and filling.

Prepare Scallion Sour Cream

    Chop Scallions

    Finely chop the scallions and set aside.

    Mix with Sour Cream

    In a small bowl, mix the chopped scallions with the sour cream. Add salt to taste.
