Seasoned pulled chicken served inside a grilled quesadilla shell with pico de gallo, melted cheddar cheese and a side of scallion sour cream.

Prepare Pulled Chicken

Cook the Chicken
In a large skillet, heat the olive oil over medium heat. Add the chicken breasts to the skillet and season with chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Sear the chicken for about 5-7 minutes on each side until cooked through.

Assemble Quesadillas

Prepare Cheese and Tortillas
Lay a tortilla flat on a clean surface. Sprinkle a generous amount of shredded cheddar cheese over half of the tortilla.

Add Chicken and Pico de Gallo
Top the cheese with a portion of the pulled chicken and a spoonful of pico de gallo. Fold the tortilla in half to cover the filling.

Repeat for Remaining Quesadillas
Repeat the process for the remaining tortillas and filling.
Prepare Scallion Sour Cream

Chop Scallions
Finely chop the scallions and set aside.

Mix with Sour Cream
In a small bowl, mix the chopped scallions with the sour cream. Add salt to taste.
Serve

Plate the Quesadillas
Cut each quesadilla into wedges and serve hot with a side of scallion sour cream.
