Haddock Preparation

Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Herb Butter
In a small saucepan, melt the unsalted butter over medium heat. Add the minced garlic, chopped parsley, chopped thyme, salt, and black pepper. Stir well and cook for 2-3 minutes until fragrant.

Arrange Haddock
Place the haddock fillets in a baking dish and pour the white wine over them.

Add Herb Butter
Pour the melted herb butter evenly over the haddock fillets.

Add Bread Crumbs
Sprinkle the bread crumbs evenly over the top of the haddock.

Bake
Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.

Whip the Potatoes
Use a potato masher or electric mixer to whip the potatoes until smooth and creamy.

In a large skillet, heat the olive oil over medium heat.

Sauté the vegetables for about 8-10 minutes, or until they are tender but still crisp.
