Make the Roux
In a large heavy-bottomed pot, heat the vegetable oil over medium heat. Gradually whisk in the flour to create a roux. Stir constantly until the roux turns a dark brown color, about 15-20 minutes.

Add Garlic and Sausage
Stir in the minced garlic and sliced Andouille sausage, cooking for an additional 3-5 minutes until the sausage is browned.

Add Liquids and Spices
Pour in the chicken broth and tomato sauce. Add the Old Bay seasoning, cayenne pepper, bay leaves, salt, and black pepper. Stir to combine.

Simmer the Gumbo
Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 30 minutes, stirring occasionally.

Add Seafood
After the gumbo has simmered, add the shrimp and crab meat. Cook for an additional 5-10 minutes or until the shrimp are pink and cooked through.

Garnish and Serve
Remove the bay leaves from the pot. Serve the gumbo hot, garnished with chopped parsley and sliced green onions.
