Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Breading Mix
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Coat the Calamari
Dip each calamari ring into the buttermilk, allowing any excess to drip off, then dredge in the flour mixture until fully coated.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat vegetable oil to 375°F (190°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add the Tomatoes
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.
