Marinate the Shrimp

In a medium bowl, combine the buttermilk and Cajun seasoning. Add the shrimp and ensure they are fully submerged in the buttermilk mixture. Cover and refrigerate for at least 30 minutes to marinate.

Prepare the Breading

In another bowl, mix the flour, cornmeal, salt, and black pepper. This will be the breading for the shrimp.

Heat the Oil

In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature by dropping a small amount of the breading into the oil; it should sizzle immediately.

Bread the Shrimp

Remove the shrimp from the buttermilk marinade, allowing excess to drip off. Dredge each shrimp in the flour-cornmeal mixture, ensuring they are well coated.

Fry the Shrimp

Carefully place the breaded shrimp in the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

In a small bowl, mix together the mayonnaise and hot sauce until well combined. Adjust the hot sauce to taste.

Slice the hoagie rolls lengthwise without cutting all the way through. Spread a generous amount of the spicy mayo on both sides of the roll.

Layer the shredded lettuce and sliced tomatoes on the bottom half of the hoagie rolls. Top with the crispy fried shrimp.
