Preparing the Fries

    Cut the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the potatoes and pat them dry with paper towels to ensure they fry properly.

    Heat the Oil

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).
