Preparation of Alligator Bites

    Marinate the Alligator Meat

    In a bowl, combine the cubed alligator meat and buttermilk. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

    Prepare the Breading

    In a shallow dish, mix together the flour, cornmeal, salt, black pepper, paprika, garlic powder, and onion powder until well combined.

    Heat the Oil

    In a large, deep skillet or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

Frying and Serving

    Coat the Alligator Bites

    Remove the marinated alligator meat from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring it’s well coated.

    Fry the Bites

    Carefully place the coated alligator bites into the hot oil in small batches. Fry for about 3-4 minutes, or until golden brown and cooked through. Use a slotted spoon to remove them and drain on paper towels.

    Prepare the Dipping Sauce (Optional)

    In a small bowl, mix together the mayonnaise, hot sauce, and lemon juice. Adjust the hot sauce to taste.
