Preparing the Cajun Shrimp

Marinate the Shrimp
In a bowl, combine the shrimp, Cajun seasoning, olive oil, and minced garlic. Toss well to coat the shrimp evenly. Allow to marinate for 15 minutes.

Cook the Shrimp
Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side or until the shrimp are pink and opaque. Remove from heat.
Preparing the Slaw

Make the Slaw Dressing
In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and black pepper until smooth.

Combine Slaw Ingredients
In a large bowl, combine the thinly sliced cabbage and grated carrot. Pour the dressing over the cabbage mixture and toss until well combined. Refrigerate for at least 10 minutes before serving.
Assembling the Tacos

Warm the Tortillas
In a dry skillet, warm the corn tortillas for about 30 seconds on each side until pliable.

Fill the Tacos
Place a generous amount of Cajun shrimp in each tortilla, top with slaw, and garnish with chopped cilantro.

Serve the tacos with lime wedges on the side for squeezing over the top.
