    Cutting the Potatoes

    Wash and peel the Russet potatoes. Cut them into evenly sized fries, about 1/4 inch thick. Place the cut fries in a large bowl filled with cold water to soak for at least 30 minutes. This helps remove excess starch.

Seasoning

    Mixing Cajun Seasoning

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, salt, and black pepper. Mix well to create the Cajun seasoning blend.

Frying

    Heating the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature.

    Frying the Fries

    Drain the soaked fries and pat them dry with paper towels. Carefully add a batch of fries to the hot oil and fry for about 5-6 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

    Seasoning the Fries

    While the fries are still hot, sprinkle the Cajun seasoning mix over them and toss to coat evenly. Repeat the frying and seasoning process with the remaining fries.
