Method

Preparing the Blackened Catfish

  1. 1

In a small bowl, mix together the paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper to create the blackening seasoning.

  2. 2

Pat the catfish fillets dry with paper towels and brush both sides with olive oil.

  3. 3

Generously coat both sides of each fillet with the blackening seasoning.

  4. 4

Preheat the grill to high heat.

  5. 5

Once the grill is hot, place the seasoned fillets directly on the grill grates.

  6. 6

Cook the catfish for about 3-4 minutes per side, or until the fish is cooked through and has a nice blackened crust.

  7. 7

Remove the fillets from the grill and let them rest for a few minutes before serving.

Cooking the Rice

  1. 8

In a medium saucepan, combine the white rice, water, and salt.

  2. 9

Bring the mixture to a boil over high heat.

  3. 10

Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.

  4. 11

Remove from heat and let the rice sit, covered, for an additional 5 minutes.

  5. 12

Fluff the rice with a fork before serving.
