Dough Preparation

    Activate the Yeast

    In a small bowl, combine the milk (heated to about 110°F) and active dry yeast. Let it sit for about 5-10 minutes, until it becomes frothy.

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt until evenly combined.

    Combine Wet Ingredients

    In another bowl, beat the eggs, then add the activated yeast mixture, melted unsalted butter, and vanilla extract. Mix well.

    Form the Dough

    Pour the wet mixture into the flour mixture and stir until a soft dough forms. You may need to add a little more flour if the dough is too sticky.

    Knead the Dough

    On a floured surface, knead the dough for about 5-7 minutes until it is smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.

Frying

    Prepare the Oil

    In a large, heavy-bottomed pot, heat vegetable oil to 350°F. Use a thermometer for accuracy.

    Shape the Beignets

    Once the dough has risen, punch it down, then roll it out on a floured surface to about 1/4 inch thick. Cut into squares (about 2x2 inches).

    Fry the Beignets

    Carefully drop a few squares of dough into the hot oil, frying them in batches. Fry for about 2-3 minutes on each side, or until golden brown.

    Drain and Dust

    Using a slotted spoon, remove the beignets from the oil and place them on paper towels to drain. While still warm, dust generously with powdered sugar.
