    Make the Ice Cream Base

    In a medium saucepan, combine heavy cream, whole milk, and half of the sugar. Heat the mixture over medium heat until it is warm but not boiling. In a separate bowl, whisk the egg yolks with the remaining sugar until pale and creamy. Gradually whisk in some of the warm cream mixture into the egg yolks to temper them, then pour the yolk mixture back into the saucepan. Cook over low heat, stirring constantly until the mixture thickens and coats the back of a spoon. Remove from heat and stir in vanilla extract and salt. Cool the mixture, then refrigerate it for at least 4 hours or overnight.

    Churn the Ice Cream

    Once the base is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer the ice cream to an airtight container and freeze until firm, about 4 hours.
